I love food, and since I've been a vegan I noticed that I love cooking even more. I have been on blogs, tumblr and pinterest lately to compile some of my favorite meals for us vegan foodies that are in different levels of difficulty to make. This is an easy meal that I modified from how I used to cook growing up. The meal is Cauliflower & Chickpea Curry from Naturally Ella's Special Diets on her site. I'm West Indian- American so I love curry and Indian dishes.
Ingredients:
2 table spoons of sunflower oil (or olive oil)
1 large onion (diced small)
2 tablespoon of curry
1 can of coconut milk (measured off in cups)
3 cloves of garlic (minced)
1 can of chickpeas (washed)
1/2 tea spoon of salt
1 small head of cauliflower
*a pinch of red pepper flakes for the spice lovers.*
Cut cauliflower into small florets equalling 3 to 4 cups. Heat sunflower oil in a skillet at medium- low heat and add minced garlic. Saute for 1 minute and then add cauliflower, 2 tablespoons of the curry powder, 1/2 teaspoon of salt and the pinch of red pepper flakes. Stir until well combined and add the coconut milk in cup by cup with the chickpeas. Reduce to a simmer. You can use all the coconut milk or not; it depends on your desired consistency.
Serve with brown rice and enjoy!
