My co-worker has been trying to get me to make this for the longest. Steel Cut Oatmeal soaked overnight in Almond Milk (or whatever your favorite milk substitute is) with fruits, nuts and spices has been all the rage lately. Especially since I have decided to start eating cleaner and working out more, I wanted to find a meal that was as tasty as it was good for me. I found two recipes via

This Homemade Life that I modified. I plan to make this for Sunday Morning breakfast
Ingredients (Make 2 servings)
- 1 cup steel-cut oats
- 1 cup almond milk
- 2 tablespoons ground flax
Optional:
- 1/4 teaspoon cardamon
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1 tablespoon maple syrup
You can add your favorite fruits and nuts as well.
Directions:
The night before, combine the first three ingredients in a small jar. Place in the refrigerator. In the morning, you can add the nuts and fruits.
